If i have an ada / usdt reverse gridbot, doesn't it collect ada?

The grid profit is in ada, but the release profit is in usdt.

If I close the bot, will I have more ada or usdt ??

It is basically grid bot but nominated in Ada. Its profit is in usdt since it will buy lower and sell higher.

If you close the bot there will be 2 option, use the profit to buy Ada or you just want to keep usdt. If you use the positive profit to buy ada, you will have more ada compare to buying ada straight in the beginning.
